Shirataki

Shirataki Sake Brewery was founded in 1855 by Tosuke Minatoya in Yuzawa, a key location on the Mikuni Highway connecting Echigo and Edo. Echigo Yuzawa, located in the Uonuma region of Niigata Prefecture, is a region with heavy snowfall, and is blessed with an environment rich in nature, where water from spring meltwater turns into clear groundwater over about 50 years. This groundwater is pumped up from Shirataki Sake Brewery's three wells and is the soft water used to prepare all sake, and is an important element in shaping the quality of the brewery's sake. As the name of our representative brand ``Jozenjosui'' suggests, we aim to produce sake that is as pure and supple as water, and we are carving out the future of sake brewing in Niigata by valuing over 160 years of history and tradition.
