Noguchi Naohiko Kenkyuuzyo

The Naohiko Noguchi Research Institute was established to pass on the spirit and techniques of Mr. Naohiko Noguchi, known as one of the four kings of Noto toji, to the future. Mr. Noguchi, who became the chief brewer at the age of 28, has devoted himself to sake brewing for over 70 years, including reviving Yamahai-jikomi with the desire to ``make delicious sake and make the people who drink it happy.'' Currently, young sake brewers carefully selected by Mr. Noguchi continue to carefully brew sake, combining his records with the latest technology, and paying close attention to changes in rice, yeast, water, and climate. Not only does it have a freshly squeezed taste, but the taste that deepens as it ages shows its technical capabilities.
