About the Brewery


Chiyo Sake Brewery is a historic sake brewery founded in 1873 in Kushira, Gose City, Nara Prefecture. The brand ``Shinomine'' was created in 2000 with the aim of producing ``good sake that doesn't need to be sold in a hurry.'' This sake is brewed using classic sake rice such as Omachi, Yamada Nishiki, Aizan, Ise Nishiki, and Kamenoo, with the concept of deepening through aging.

At Chiyo Sake Brewery, we take advantage of the local natural blessings and use groundwater from our own wells for brewing water. Furthermore, we started growing our own rice in 1996 and are currently expanding our cultivated land. By integrating rice cultivation and sake brewing, we create unique sake that reflects the local climate through the interaction of agriculture and brewing.

Based on the belief that "good sake connects people and fosters good relationships," we strive to make sake that captivates people by making the most of the power of microorganisms and nature. This romantic sake continues to deliver excitement and joy to those who drink it.
