About the Brewery


Hakutsuru Sake Brewery is a historic sake brewery based in the Nada area of ​​Hyogo Prefecture. Nada is Japan's number one producer of sake, and has the perfect conditions for sake brewing, including high-quality underground water from the Rokko Mountains, sake rice such as Yamada Nishiki, and cold air called Rokko Oroshi. Hakutsuru Sake Brewery takes advantage of these natural conditions and advanced technology to continue brewing sake with a focus on quality.

In 1995, we began developing Hakutsuru Nishiki, a sake rice comparable to Yamada Nishiki, and it was registered as a variety in 2007. In addition, we produce a wide variety of sake using manufacturing methods that incorporate both the latest machinery and traditional hand-made methods. Hakutsuru Sake Brewery aims to bring out the vitality of rice, and is still passionate about producing high-quality sake.
