About the Brewery
Sakai Sake Brewery is a historic sake brewery founded in 1871 (Meiji 4) in Iwakuni City, Yamaguchi Prefecture. Its representative brand, ``Gokyo'', comes from Kintaikyo Bridge, a symbol of Iwakuni City, and contains the wish to ``become a bridge between hearts.'' The ``soft water preparation'' method uses clean underground water from the Nishiki River for the brewing water, resulting in a rich aroma and soft taste.
The company is particular about "rice, water, and people," and uses rice from its local Yamaguchi Prefecture, and its chief brewers and brewers are also locals. In 2015, we established an agricultural production corporation and are working to improve the quality of raw materials by having our employees grow their own rice. In addition, underground water, which is known as ultra-soft water, supports the delicate flavor of the sake and allows for sake brewing that is in harmony with the local climate.
Sakai Sake Brewery continues to produce sake that combines tradition and innovation while valuing the local nature and culture, providing local sake loved by sake fans across the country.
