About the Brewery

Seikin is a brewery that upholds the philosophy of "harmony with nature" and continues to take on the challenge of reviving traditional sake brewing in the modern era. Based on the philosophy of "Roots Organic," we are working to revive the original variety of the ancient rice "Kamenoo" and make sake that takes advantage of its wild characteristics. Sengoku does not use rice as just a raw material, but considers all the living creatures that live in the rice fields to be the true bearers of sake brewing, and practices a return to the basics of agriculture.

In addition, we pay attention to the ``kimoto'' brewing method established in the Edo period, and prepare all sake using a unique method called ``Edo Gaeri.'' This technique takes advantage of the natural activities of a variety of microorganisms, and achieves a harmonious flavor that cannot be created with modern technology that pursues rationality.

Seikin is pioneering the future of sake brewing based on respect for nature and the revival of tradition, while working with local woodlands and people to deliver sake that is both nostalgic and new.
