Hamada Sake Brewery, located in Ichikikushikino City, Kagoshima Prefecture, has the only authentic shochu brewery, Kanayamagura, which prepares, stores, and ages its shochu in a cave. It was established as a place to inherit the history and culture of Kushikino Kanayama, which remains in this area, and to pass on the roots of Japanese authentic shochu and the spirit of Satsuma to the future. The cave, which has a total length of 120km, maintains a constant temperature throughout the year, making it suitable for aging shochu, and the shochu is produced using the traditional method of brewing and storing in jars. Hamada Sake Brewery was founded in the first year of the Meiji era, and each of its three breweries, Denbeigura, Denzoingura, and Kanayamagura, embodies the ideals of tradition, innovation, and inheritance. In addition, as an effort to convey the history and culture of the region, Kanayama Kura holds the ``Satsuma Kanayama Private School'' and continues to disseminate the charm and culture of the local area. The company's dream is to make ``honkaku shochu a true national sake and a world-class sake.'' We believe that authentic shochu, which has a history of 500 years, is suitable as a representative drink of Japan due to its cultural and popular appeal.
