Yachiyoden Sake Brewery was rebuilt in 2004 by the third generation, Mr. Eiju Yagi, by moving the brewery, which had been closed for about 30 years, to the Sarugajo Valley. After that, the fourth generation, Mr. Kentaro Yagi, strengthened the foundation of the brewery through agriculture, and in 2018, it was approved as an "agricultural corporation." The company has spent 10 years building its unique style of ``unity of agriculture and brewing,'' and not only grows high-quality sweet potatoes entirely in-house, but also cultivates rice for koji. We have also established a method for producing molasses-aged sweet potatoes, and have obtained patents for shochu ``Tsurushi Yachiyoden'' and ``Crio,'' which use aged potatoes such as ``Tsurushi Imo'' and ``Frozen Imo.'' This innovative approach has greatly improved the quality and value of shochu. Inheriting the tradition from the first generation, the fourth generation, Mr. Kentaro Yagi, continues to take on challenges with an eye on the future. Yachiyoden Sake Brewery is moving forward with the local community, with an attitude of balancing the traditions of the past with the creation of the future.
