Myoko Sake Brewery is a sake brewery located in Joetsu City, Niigata Prefecture that aims to produce ``sake with elegance.'' Mr. Masayuki Hirata, who serves as the brewer, is a skilled technician who has been certified as a Niigata Master Craftsman by Niigata Prefecture, and is a central figure in the sake brewing at Myoko Sake Brewery. By using underground water from Mt. Myoko and rice suitable for sake brewing from Niigata Prefecture, and paying close attention to the cultivation of koji and yeast, we produce sake that exudes a sense of style. Mr. Hirata uses ``in-house active cultured yeast'' in two stages to create sake that has both umami and sharpness. While preserving the tradition and spirit of innovation of the brewery, we strive to improve quality and brew sake with local roots.
