Chief brewer Kotani and Tatsuei Shimohara, who laid the foundation for today's "Daishinshu," were affectionately known as "Oyassa" both inside and outside the brewery. At the age of 16, he joined the former Haradaya Sake Brewery and continued on the rigorous path of sake brewing. We also place great importance on our relationships with contracted farmers and are committed to milling our own brown rice. As a result, Daishinshu has become a brand that is valued for its reliability and quality. Since the 2020 sake brewing year, we have consolidated our bases at Matsumoto Kura and are striving to make even better sake.
