Based in Itoshima City, Fukuoka Prefecture, Shiraito Sake Brewery continues to produce sake that takes advantage of the rich natural environment and the wisdom of our ancestors. Itoshima is a well-known production area for Yamada Nishiki throughout the country, and you can experience the growth up close from rice planting in early summer to harvest in autumn as you prepare for sake brewing in the winter. The Itoshima area, which grows Yamada Nishiki, which is considered to be the highest quality sake rice, has grown into one of the leading producers through steady efforts. In 1989, Shiraito Sake Brewery began brewing sake with authentic local rice, using Yamada Nishiki, which was grown with great care in their hometown. The brewery takes advantage of its location as ``a brewery surrounded by Yamada Nishiki rice fields,'' and gently presses sake using the traditional Haneki Shibori method. With the idea that "Shiraito Sake Brewery is located in Itoshima" in mind, we continue to brew sake from Itoshima, expressing our gratitude to our hometown in every drop of sake.
