Maruishi Jozo began producing sake in Okazaki City, Aichi Prefecture in 1690, and has been producing sake for over 330 years. Okazaki City is the birthplace of Tokugawa Ieyasu and is a land blessed with rich nature. The history of Maruishi Brewing began with the first Torimachi Santayu, who learned sake brewing along the Tokaido route during the Edo period, and started a sake brewing business in 1690 using farmland. During the Meiji period, the company expanded into the cotton and banking industries, and in 1900 they opened a new brewery in Nada, where they began producing sake called Choyo. In Okazaki, the company produced local sake under the name Mikawa Samurai, and also produced shochu, mirin, miso, and soy sauce. However, most of the brewery was destroyed in the Okazaki air raid during the Pacific War, and after the war, the miso brewery that was left behind was rebuilt and sake production resumed. Even as Maruishi Jozo expands into a variety of businesses, it has passed down the tradition of continuing to produce sake from Okazaki to future generations.
