Hakkaisan Brewery's sake is a masterpiece created to complement the dining experience. Our goal is to create a place that doesn't spoil the delicate flavors of the food, doesn't interfere with conversation, and makes you suddenly realize how delicious it is as you pour more and more glasses. Its taste is something you can enjoy without getting tired of while accompanying your meal. It is delicious yet easy to drink, dry yet without any harsh edges, and light yet deep. It is characterized by a beautiful sake that looks like a polished ball. For the preparation water, we use Raiden-sama no Shimizu, underground water from the sacred mountain Mt. Hakkaisan. Hakkaisan Jozo's commitment to sake production is supported by the use of carefully selected sake rice, handmade koji, and skilled techniques, as well as the best tools and dedication to brewing sake.
