Kokuryu Sake Brewery was founded in 1804 (Bunka 1) and is a sake brewery with a history of over 200 years. Located in Matsuoka, Eiheiji-cho, Fukui Prefecture, we use underground water from the famous Kuzuryu River, which is nurtured by meltwater from the sacred Mt. Hakusan. This soft water creates a light and supple mouthfeel, supporting the beautiful and full-bodied flavor of Kokuryu Shuzo's Ginjo sake. Our main brands, ``Kokuryu'' and ``Kuzuryu,'' are special products that take full advantage of the benefits of high-quality local sake rice and famous water. The company uses carefully selected rice suitable for sake brewing, such as Yamada Nishiki from the Special A area of ​​Tojo, Hyogo Prefecture, and Gohyakumangoku from Ono, Fukui Prefecture. In particular, we are focusing on cultivating high-quality sake rice in collaboration with dedicated farmers in the Tojo area. Masato Mizuno, the 7th generation brewer, took inspiration from wine culture and worked to improve the aging and quality of sake, and was the first in the country to commercialize ``Kokuryu Daiginjo Ryu''. The attitude of continuing to innovate while preserving tradition has made Kokuryu Sake Brewery a famous brewery that is loved both domestically and internationally.
