Kubo Sake Brewery is a sake brewery with a history of more than 200 years, dating back to 1789, when the second generation, Mr. Sokichi Kubo, began producing Kiyo Nishiki sake. After that, during the Taisho and Showa periods, it became known as the brand ``Enmei'' and after the war, as ``Shizukaze,'' but production was temporarily suspended in the 1970s due to a decline in demand for sake. However, in 2007, we brought in a chief brewer and began manufacturing Kubo, a handmade barley shochu that utilizes the brewer's unique techniques and the five senses of the creator. The storehouse is located within the grounds of Kibune Shrine, which is known as a historic place where the water god is enshrined. In an environment blessed with abundant spring water, we continue to carefully produce shochu in small quantities, aiming for ``a taste that can only be made here.'' The Nagasu area of ​​Usa is a granary region where rice, wheat, and soybeans are actively cultivated, and it is also an area blessed with historical and cultural resources such as the Buzen Sea and Usa Jingu Shrine. At Kubo Sake Brewery, we work diligently to brew sake while valuing handiwork in order to pass on the Japanese distilling culture of authentic shochu to the next generation. We aim to continue to be a presence that widely conveys the charm of the region, along with the thoughts that are put into each one.
