Founded in 1712, Agataya has a long history as the oldest sake brewery in the prefecture, and while making use of the traditional techniques cultivated in sake production, it produces shochu with an emphasis on quality over quantity. The Ajimu Basin in Usa City, where the brewery is located, is blessed with clear underground water from Mt. Yufu, also known as Bungo Fuji, and has unique climate conditions with large temperature differences. On sunny mornings, the entire basin is shrouded in a deep white mist, creating the perfect environment for shochu production. Here, we use carefully selected barley and clear water from nature, and carefully brew it at low temperatures over time. In addition, Ajimu-in Basin is known as one of Japan's leading trowel-e painting towns, and is an area where old-fashioned houses still remain. The brewery continues to pursue the best aroma and taste based on the technology and passion passed down since its founding. We provide special shochu that is a blend of tradition and nature, and continue to be loved by many people.
