Takahashi Sake Brewery Co., Ltd., founded in 1900, has continued to manufacture and sell authentic rice shochu ``Shiratake Shiro'' in the Hitoyoshi-Kuma region of Kumamoto Prefecture. Because of this commitment to quality, Shiratake Sake Brewing Research Institute Co., Ltd. was established in 1986 to specialize in the production of unprocessed sake. Takahashi Sake Brewery produces pure, high-quality shochu without any additives by combining carefully selected water and rice, dialogue with microorganisms, and the craftsmanship and passion of the brewers. ``Shiradake'' and ``Shiro'' are delivered as products loved by a wide range of people, with their natural taste intact. We also carry out thorough efforts to control and improve quality, and continue research and development on a daily basis. Adjacent to the site is the bottling line of the Takahashi Sake Brewery Hitoyoshi factory, establishing a streamlined production system from manufacturing to shipping. Furthermore, in 2010, we opened the ``Kuma Shochu Museum Hakutake Densetsu.'' This facility introduces the charms of ``Shiratake'' and ``Shiro'' as well as the historical and cultural value of Kuma shochu, and continues to communicate the charm of the region to tourists visiting the Hitoyoshi-Kuma region.
