Kuma shochu, which boasts a tradition of over 500 years, has been designated as a production area by the WTO and recognized as a member of the world's famous alcoholic beverages. The Kuma Basin is home to the Kuma River, which was selected by the Environment Agency as one of the most beautiful rivers in Japan, and is made from rice grown in the rich natural environment of the clear air and climate with large temperature differences. We are blessed with an ideal environment for making shochu. In this unique climate, the region's unique shochu has been cultivated over a long history. At Tsutsumi Sake Brewery, we use a variety of methods to store and age our shochu, including barrels, pottery, and bottles, in order to give our shochu depth and complexity. In addition, while preserving tradition, we do not forget to innovate, and work in collaboration with university laboratories to develop new products and improve technology. We carefully preserve the traditional taste and manufacturing method of Kuma shochu, including handmade shochu made with a lot of time and experience, while also focusing on research into liqueurs and health drinks that incorporate new sensations. Tsutsumi Sake Brewery continues to take on the challenge of creating the next generation of shochu.
