Aramasa Sake Brewery is a traditional sake brewery in Akita Prefecture that was founded in 1852 (Kaei 5). This brewery, founded by founder Sato Ubei, has been a leader in Japanese sake culture through the turbulent period at the end of the Edo period, with the name "Shinsei" derived from "Shinsei Atsutoku." In particular, the ``Kyokai No. 6 yeast'' developed in the early Showa period was extracted from the moromi of Aramasa Sake Brewery and brought innovation to sake brewing. Shinmasa Sake Brewery is committed to making pure pure rice using rice grown in Akita Prefecture, and is particular about natural sake brewing that does not use any additives. We use a kimoto-based shubo rather than a sokujo shubo, and while adhering to traditional methods, we incorporate modern techniques and values ​​into our sake brewing. It is also characterized by its emphasis on quality control and sustainability, such as the unified specific name "Junmaishu" and sales mainly in 4-go bottles. Aramasa Sake Brewery continues to pursue the original charm of Japanese sake by utilizing Akita ingredients and traditional techniques.
